Make Mooncakes

There’re many kinds of mooncakes in the market.

Per regions: Beijing-style, Cantonese-style, Yunnan-style, Chaoshan-style, Suzhou-style, Taiwan-style, Hong Kong-style, or even Japanese style mooncakes.

Today we’ll make the traditional mooncakes - Lotus Seed Paste Mooncakes. Let’s start......

1.What we need (传统月饼）

1. Dough饼皮

Flour中粉: 165g

Alkaline Water枧水（也叫碱水）: 4g

Golden syrup 转化糖浆: 116g

Peanut oil花生油: 50g

2. Filling馅料

Lotus seed paste莲蓉 (20, 27-28g each)

Slated egg yolks 咸蛋黄 (20, 7-8g each, about half of an egg yolk)

3. Egg Glaze表面刷液

Egg yolk蛋黄 (1个）

Egg white蛋白 (1/4, about 8g)

2.Steps

1. Mix together the ingredients for the dough.

Stir (搅拌) together the alkaline water, golden syrup, and peanut oil.

Sift (筛) in the flour into the mix slowly.

Mix these ingredients together to form a dough.

Cover the dough with saran wrap. (保鲜膜)

Set the dough aside for at least 3 hours.

制作饼皮，将枧水、糖浆、花生油混合后搅拌，加入过筛面粉，制成面团。保鲜膜包好放置3个小时。

2.Prepare the filling.

Separate the lotus seed paste into 20 equal parts and roll into balls.

将莲蓉分成20等分

Make a hole in the ball of lotus paste, put the egg yolk inside, and wrap it.

在莲蓉团中压出一个洞，把半个生蛋黄放进去，用莲蓉包住它

Making sure the weight of wrapped lotus seed and egg yolk is about 35g.

莲蓉蛋黄球的总量大概在35克左右，否则太大会包不下哦。

Make the lotus seed paste that covers the egg yolk into a ball again.

把莲蓉鸭蛋馅料揉成球。

Cover the balls with saran wrap and set it aside.

用保鲜膜包好放置待用。

3.Separate the dough into 20 equal parts, 15g each.

Roll each of those into a ball as well. Cover the balls with saran wrap and set it aside.

分割饼皮成20等份，15g一个，揉成球形，保鲜膜包好放置待用。

4.Assemble your mooncake.

Flatten each piece of dough into a small disk.

Cover the lotus paste ball (with the egg yolk inside) with the dough completely.

Repeat this for each mooncake.

We should have about 20 mooncakes.

取饼皮，用大拇指把中间部分压扁，放入馅料并包好，重复此步。

5.Decorate the mooncake with mooncake mold.

Spray your mooncake mold with nonstick spray or oil.

Press each mooncake lightly into the mold.

Take the mooncake out of the mold, and put it onto a baking sheet or baking pan.

月饼模具喷/刷一层薄薄的油，将月饼放入模具里压花，取出放入烤盘。

6.Bake mooncakes for the first time.

Preheat the oven to 200℃ (degrees celsius)

Put the mooncakes into the oven and bake for 5 minutes.

While the mooncakes are baking, make the egg wash (蛋液).

Mix together the egg whites and the egg yolk; sift them through a sieve (过筛) (sieving can be neglected).

预热烤箱200度。将月饼放入烤箱烤5分钟。期间做蛋液（可过筛，也可不过）

7.Brush the baked mooncake with egg wash.

Take the mooncakes out of the oven after about 5 minutes and brush them with the egg wash.

5分钟后取出月饼，刷蛋液。

8.Bake the mooncake again.

Put them back in the oven with temperature set at 180℃.

Bake around 15 minutes until they become golden brown.

放入预热（180度）的烤箱，烤15分钟，中间鼓出并上色后即可取出。

The ingredients

Mooncake Skin powder (冰皮月饼粉): 200g

Boiled water (开水): 200g

Fillings (馅) (choose the flavors you like): 400g

Mold (模具): 50g mooncake mold. You can make 16 mooncakes.

2.Steps

1. Pour the mooncake skin powder into the boiled water.

2. Stir with an eggbeater (打蛋器) or chopsticks (筷子).

3. While it’s not too hot, roll it into smooth dough.

4. Separate the dough into 16 equal parts, each 25g. Roll them into balls. Cover the saran wrap and set it aside for 1 hour.

5. Prepare 16 fillings, with weight 25g each. Roll them into balls as well.

6. Wrap each filling with the snow skin completely and roll them into balls.

7. Shape the filled dough with the mold

8. Put the filled dough into the mold, press, and the mooncake is ready.

9. If you want to make colorful mooncakes, add some fruit and vegetable powder in step 2 before separating dough.

6.Then we can see the entire light at half of the moon, that’s a full moon.

But this time the light is on the opposite side, then another quarter moon, last quarter moon (another crescent), and finally back to new moon and the cycle begins again.

1. Twist an Oreo slowly to maximize the amount of frosting on one side when you separate the halves. In case you fail, you can eat the cookie and then try a new one.

2. Create the phases of the moon out of the frosting with the popsicle stick or other tools.

3. Arrange the phases of the moon in order, just as what we have seen. Well done sweetheart.

If you don’t have Oreo cookies at home, you can ask your kids to draw the moon phases on paper.
